  • Polish Chicken and Dumplings

    Chicken and Dumplings using a version of polish egg noodles for the dumplings

    Ingredients

    • 3 lbs whole chicken
    • 1 onion
    • 1 stalk celery
    • 1 T poultry seasoning
    • 1 t allspice
    • 1 t basil
    • 1/2 t salt
    • 1 t pepper
    • 1 t seasoning salt
    • 1 can cream of chicken soup
    • 4 eggs
    • 2 T olive oil
    • 1 T salt
    • 1 t pepper
    • 2 C water
    • 4 C flour

    Directions

    1. place chicken, onion, and celery in a large pot, and then fill pot with water. Season with poultry seasoning, whole allspice, basil, 1/2 t salt, 1 t pepper, and seasoning salt. Bring to a boil. Reduce heat, and simmer for approximately 2 hours, or until chicken is done.
    2. Remove chicken from brother, and strain brother to remove seasonings and any bone. Return brother to pan, stir in cream of chicken soup, and continue simmering, Set chicken aside to cool
    3. In a medium bowl, stir together eggs, olive oil, 1 T salt, and 1 t pepper with 2 cups water. Gradually add flour, and stir until thick
    4. Using a larger spoon and knife, scoop a spoonful of the dough and cut small pieces into the brother, Repeat until all dough is used. Stir, cover, and simmer, for about 15 minutes.
    5. Meanwhile, skin and debone the chicken. Cut the meat into small pieces, add to the broth, and heat through, serve.
