Chicken And Dumplings
Ingredients
- 1 1/2 lb chicken breast tenders
- 1 Tbsp. extra virgin olive oil
- 2 Tbsp. butter
- 1 x russet potato peeled, diced
- 2 med carrots peeled, and diced or possibly thinly sliced
- 1 med onion minced
- 1 x celery rib diced
- 1 x fresh or possibly dry bay leaf Coarse salt to taste Freshly-grnd black pepper to taste
- 1 tsp poultry seasoning
- 2 Tbsp. flour
- 1 quart chicken broth or possibly stock (preferred brand Kitchen Basics)
- 1 sm box biscuit mix (preferred brand Jiffy Mix)
- 1/2 c. hot water
- 1 handf flat-leaf parsley minced
- 1 c. frzn green peas
Directions
- Dice tenders into bite size pcs and set aside. Wash hands.
- Place a large pot on stove over medium-high heat. Add in oil, butter, vegetables and bay leaf and cook 5 min, stirring frequently. Season mix with salt, pepper and poultry seasoning. Add in flour to the pan and cook 2 min. Stir broth or possibly stock to the pot and bring to a boil. Add in chicken to the broth and stir.
- Place biscuit fold in a bowl. Combine with 1/2 c. hot water and parsley. Drop tablespoonfuls of prepared mix into the pot, spacing dumplings proportionately. Cover pot tightly and reduce heat to medium-low. Steam dumplings 8 to 10 min. Remove cover and stir chicken and dumplings to thicken sauce a bit. Stir peas into the pan, remove chicken and dumplings from heat and serve in shallow bowls.
