  • My Momma's Chicken and Dumplings

    Ingredients

    • 6-8 pieces of chicken (I prefer skinless bone-in thighs)
    • ~ 1 c of diced onion
    • ~ 1 c diced carrots
    • ~ 1 c diced celery
    • ~3 cloves of garlic
    • ~2-3 tsp of chicken broth powder
    • 2-3 bay leaves
    • Salt, to taste
    • Bisquick (I used the heart healthy version)
    • Milk
    • Parsley, to taste
    • Pepper, to taste

    Directions

    1. Place the chicken, veggies and spices in a deep pot. Cover with water and bring to a boil. Cook for approximately 20-30 minutes (or until the meat is cooked through). At this point, you can add the dumplings. However, I usually turn down the heat and let the chicken "marinate" on the stove. Totally up to you. Once the chicken is cooked, remove the bay leaves and bones (if needed). Make the dumplings according to the instructions on the Bisquick box. Sprinkle the top with parsley and pepper. Add salt if needed.
