    This was so simple I debated posting it….. I decided that sometimes, we all can use a simple snack and it doesn’t get much easier than this. This Pizza Snack happened because, during lock-down, we got the wrong kind of bread. I was baking bread and mon mari was very happy with it – except for his sandwiches. The home-made bread made great toast but didn’t live up to his lunch standards. One day, while I was ordering groceries, I saw ‘American Sandwich Bread’. Yes, that’s what it’s called. Well, It’s actually called ‘Harry’s American Sandwich Bread’ because there is also a French ‘American Sandwich Bread’ but he prefers Harry’s. Neither one had been available for weeks. I digress….. I ordered it. Between the time I ordered it and the time they filled my order they, apparently, ran out. In their all-knowing wisdom they substituted a bread that was kind of similar. It was whole grain and it was square. It was also quite a bit smaller and all the crusts had been cut off. Mon mari does not want fancy finger sandwiches for his lunch. So we had Pizza Toast Snacks Click here to Pin Pizza Toast Print Pizza Toast Thinly sliced tomato would good, as would a bit of cooked bacon.  You could make them smaller for pick-up nibbles to pass around at a party. Author: Katie Prep Time: 5 minutes Cook Time: 15 minutes Total Time: 20 minutes Yield: 2 servings 1x Category: First Courses Scale 1x2x3x Ingredients 2 slices soft wheat or white bread 2oz (60gr) roasted red pepper, roughly chopped 2 tbs chives, chopped  2 tsp Dijon-style mustard 1oz (30gr) cheese any flavor  Instructions Cut the crust off the bread, and cut the corners making a circle With the back of a spoon, flatten the bread up to the edge but leaving a ridge. Bake the bread, 400F (200C) for 5 minutes. Remove. Divide the mustard and spread on the bread, up to the ridge. Top the mustard with chives, peppers, and cheese Bake for 10 minutes longer, until cheese is melted and edges start to brown. Notes I didn’t use pizza sauce as I only wanted a bit of flavor and I think it would have made the bread soggy. A bit of ketchup might work. If you can’t stop and smell the roses at least you can look at them while being isolated. This is a rose that mon mari started from a cutting. He planted the cutting in a pot, when it was big enough it went into the ground. He carefully put a fence around it to protect if from the bunnies. It grew. It blossomed. He took the fence away as it was now almost as big as the older roses on either side. The bunnies ate it. He put the fence around the stump. It grew again. It’s blossoming again. The fence will stay. I had to put a fence around the lilies, too. You can see some of the bare stems where the bunnies ate the leaves before I remembered to put the fence up.
