Pesto Chicken Salad
Ingredients
- 2 Tbsp. Purchased pesto
- 2 Tbsp. Mayonnaise
- 1/2 c. Finely-minced cooked chicken
- (or possibly half 3 ounce can chunk-style chicken, liquid removed)
Directions
- If necessary, drain off any excess oil from pesto. In a small bowl, stir together the pesto and mayonnaise or possibly salad dressing. Stir in chicken. Cover and refrigeratetill needed, up to 24 hrs.
- NOTES : Serve with Bite Sized Herb Biscuits (recipe for that is included in this collection).
