Penne With Italian Sausage And Green Bell Pepper Sauce
Just as easy as spaghetti but fun for something different. Ingredients
- 1 onion, minced
- 1 tbsp. vegetable oil
- 2 (3 ounce.) uncooked hot or sweet Italian sausage, casings discarded
- 1 (14 to 16 ounce.) can tomatoes, liquid removed and minced
- 1 tbsp. tomato paste
- 1/4 c. dry white wine
- 1 garlic clove, chopped
- 1/3 c. minced green pepper
- 1/2 pound penne
- 1/4 c. chopped parsley
- Freshly grated Parmesan as an accompaniment
Directions
- Cook onion in oil till softened.
- Add in sausage, cook until no longer pink.
- Stir in tomatoes, paste, wine, garlic, salt and pepper.
- Bring to a boil and simmer stirring occasionally for 15 min.
- Stir in bell pepper and parsley and simmer for another 5 min.
- While sauce is simmering, cook penne in pot of boiling salted water for 10 min.
- Drain the penne, transfer to a bowl.
- Toss the penne with the sauce and serve it with the Parmesan.
