    Pears are among my favorite fruits. Not only am I drawn to their taste, but something even about their appearance, strikes a chord with me. Sometimes it's hard for me even to take my eyes from a beautiful perfect pear. As silly as it might seem, my eye finds the line of the pear- it's simple shape so appealing that I find it a fruit that's almost borderline sensual! This easy quick-bread recipe is one way to showcase the boastful flavor of the pear. As with all quick breads, I never make just a single loaf. I make at least two so that I have one to share with a neighbor- or to freeze for pulling out to serve in another season when a guest knocks at the door.

    Ingredients

    • 3 c. all-purpose flour
    • 1/4 t. baking powder
    • 1 t. baking soda
    • 1 t. salt
    • 1 T. ground cinnamon
    • 3/4 c. vegetable oil
    • 3 eggs
    • 2 c. sugar
    • 2 c. pear, peeled and shredded
    • 1 c. pecans, chopped
    • 3 t. vanilla

    Directions

    1. Pre-Heat oven to 325 degrees.
    2. In a large mixing bowl combine flour, baking powder, baking soda, salt, and cinnamon. Make a well in the center of the bowl.
    3. In a separate bowl combine the oil, eggs, sugar, grated pears, pecans, and vanilla. Blend well. Add to well of dry ingredients. Stir until just moistened.
    4. Spoon batter into 2 greased and floured 8x5x3” inch loaf pans. Bake for one hour and 15 minutes. Cool on wire rack before removing from the loaf pans.
