  • Peach Glazed Barbecued Chicken

    Ingredients

    • 4 Tbsp. butter
    • 1/4 tsp EACH mace, dry sweet basil leaves and grnd nutmeg
    • 1 tsp salt
    • 1 Tbsp. brown sugar
    • 1 c. peach puree (made from 3 medium-size peaches, unpeeled, pitted and pureed in a blender)
    • 2 Tbsp. frzn orange juice concentrate
    • 2 Tbsp. lemon juice
    • 1 x frying chicken (about 2 1/2 to 3 pounds), split in half

    Directions

    1. Heat butter and add in spices, salt and brown sugar. Heat only till well blended. Mix peach puree, orange juice and lemon juice, then add in to spice mix. Heat again only sufficient to blend to a smooth sauce.
    2. Prepare chicken by placing halves over warm coals and cooking on one side for 10 min. Turn and cook 8 min on second side. Using fresh peach glaze, baste chicken on all sides. Continue to cook chicken, turning and basting frequently till done, brown and tender.
