  • Barbecued Chicken With Spicy Peach Glaze

    Ingredients

    • 1 c. peach preserves
    • 1 x garlic clove chopped
    • 2 Tbsp. extra virgin olive oil
    • 1 Tbsp. soy sauce plus
    • 1 tsp soy sauce
    • 1 Tbsp. dry mustard
    • 1/4 tsp cayenne pepper Salt Freshly-grnd black pepper
    • 4 x split chicken breasts - (abt 5 lbs)
    • 4 x ripe peaches pitted and halved

    Directions

    1. Heat the grill to medium warm. In a medium mixing bowl, combine the preserves, garlic, extra virgin olive oil, soy sauce, dry mustard, cayenne pepper, 1 tsp. salt, and 1/4 tsp. pepper and mix well to combine.
    2. Sprinkle the chicken breasts with additional salt and pepper, and place, skin-side down, on the grill. Cook the chicken about 10 min on each side before brushing the upturned side with glaze. Continue cooking the chicken for another 10 to 12 min, turning it every 3 to 5 min and brushing each upturned side with glaze every time, till the chicken is cooked through. Move the chicken to the oven or possibly a cooler part of grill if it gets too dark before it is cooked through.
    3. Place the peach halves on the grill, cut-side down, and grill 2 min. Turn, and brush the tops with glaze. Grill 3 to 4 min more, till the peaches are soft and the cavities fill with juices. Transfer the cooked chicken and peaches to a serving platter.
    4. Makes 8 servings.
