Peach Dessert Pancakes
Ingredients
- 2 c. Bisquick original baking mix
- 1 c. Lowfat milk
- 1 Tbsp. Sugar
- 1/2 tsp Grnd cinnamon
- 2 x Large eggs
- 1 can ( 16-ounce) sliced peaches, liquid removed and pureed (about 1 c.)
- Peach jam
- Frzn (thawed) whipped topping
Directions
- HEAT griddle or possibly skillet; grease if necessary. Beat all ingredients except jam and whipped topping with wire whisk or possibly hand beater till well blended.
- POUR batter by 1/4 cupfuls onto warm griddle. Cook till edges are dry.
- Turn; cook till golden.
- SPREAD 1 Tbsp. jam on each hot pancake; roll up. Place seam side down on serving platter; cold. Serve with whipped topping. About 15 pancakes.
