  • Peach Dessert Pancakes

    Ingredients

    • 2 c. Bisquick original baking mix
    • 1 c. Lowfat milk
    • 1 Tbsp. Sugar
    • 1/2 tsp Grnd cinnamon
    • 2 x Large eggs
    • 1 can ( 16-ounce) sliced peaches, liquid removed and pureed (about 1 c.)
    •     Peach jam
    •     Frzn (thawed) whipped topping

    Directions

    1. HEAT griddle or possibly skillet; grease if necessary. Beat all ingredients except jam and whipped topping with wire whisk or possibly hand beater till well blended.
    2. POUR batter by 1/4 cupfuls onto warm griddle. Cook till edges are dry.
    3. Turn; cook till golden.
    4. SPREAD 1 Tbsp. jam on each hot pancake; roll up. Place seam side down on serving platter; cold. Serve with whipped topping. About 15 pancakes.
