  • Peach Caprese Salad with cashew basil dressing

    Seasonal fresh farm  produce such sweet peaches, red juicy tomatoes, and aromatic basil are the perfect fixings for this beautiful summer peach caprese salad with a creamy vegan dressing.    Living in farm country, we are able to take advantage of locally grown produce all summer. One bite of a fresh off the tree, sun ripened peach and you know you can't compare it to anything you buy in the store, the sun kissed tomatoes are sweet and flavorful as well, and the aroma of freshly picked and chopped basil permeates the entire house. I have my kids for dinner (on the deck) every Friday night. With the unbearable heatwave we have been having, salads are what we feel like eating. I made my salad vegan, and added a delicious sweet cashew dressing,  but you could easily add mozzarella cheese balls or slices if you eat dairy. This salad not only tastes wonderful, it makes a pretty presentation too. It can be assembled quickly.  The cashew basil dressing is sweet, creamy, and delicious! Ingredients for salad  2 ripe peaches, sliced 1 large tomato, sliced 1 cup of diced red onion 1/4 cup of chopped basil  Ingredients for 3 ingredients Cashew Basil Dressing Recipe (recipe link) + add 1 tablespoon of maple syrup.  Directions:  Using a flat plate or platter, arrange the sliced peaches and the sliced tomato alternately until you fill the plate. Sprinkle the diced red onion and chopped basil across the plate. Drizzle the cashew basil dressing across the top.  Notes:  1. The easy recipe for the Cashew Basil Dressing is a link.
