Pastini Soup
This recipe has been handed down for many years in my family. Delicious Italian soup! I tend to add ingredients without measuring so I am giving the best estimates on ingredient measurements. Ingredients
- 4 cloves garlic
- 2 tbs olive oil
- 4 cans diced tomatoes
- 2 tbs Italian seasoning
- 1/2 tsp red crush pepper
- 1 tsp onion powder
- salt and pepper to taste
- 1/2 tsp garlic salt
- Acini de pepe pasta
- water ( I fill a med/lg stockpot half full)
- parmesan cheese for topping
Directions
- In stock pot add olive oil and garlic to brown.
- Add diced tomatoes, italian seasoning, red crush pepper and onion powder. Simmer on low 10- 15 min.
- add water
- salt, pepper to taste and garlic salt
- bring to boil
- add 1/3 of 1lb box of Acini de Pepe
- cook on low approx 20-30 min until pasta cooked
- continue to taste and season
- serve with parmesan cheese sprinkled on top
