This recipe has been handed down for many years in my family. Delicious Italian soup! I tend to add ingredients without measuring so I am giving the best estimates on ingredient measurements.

Ingredients

  • 4 cloves garlic
  • 2 tbs olive oil
  • 4 cans diced tomatoes
  • 2 tbs Italian seasoning
  • 1/2 tsp red crush pepper
  • 1 tsp onion powder
  • salt and pepper to taste
  • 1/2 tsp garlic salt
  • Acini de pepe pasta
  • water ( I fill a med/lg stockpot half full)
  • parmesan cheese for topping

Directions

  1. In stock pot add olive oil and garlic to brown.
  2. Add diced tomatoes, italian seasoning, red crush pepper and onion powder. Simmer on low 10- 15 min.
  3. add water
  4. salt, pepper to taste and garlic salt
  5. bring to boil
  6. add 1/3 of 1lb box of Acini de Pepe
  7. cook on low approx 20-30 min until pasta cooked
  8. continue to taste and season
  9. serve with parmesan cheese sprinkled on top
