Pasta With Marinara Sauce And Ricotta
Ingredients
- 3 slc Bacon, diced
- 1 x Onion, minced
- 1/2 tsp Red Pepper Flakes
- 1 jar (14oz) Marinara Sauce
- 15 ounce Part-Skim Ricotta Cheese
- 1/4 c. Parmesan Cheese *
- 1/2 tsp Salt
- 1/2 tsp Freshly Grnd Pepper
- 1/4 c. Flat-leaf Parsley, minced
- 1 lb Pene or possibly Ziti, cooked
Directions
- * Freshly grated Cook bacon in large saucepan till crisp; drain on paper towel. Throw away all but 1 tbsp drippings from skillet. Add in onion and red pepper flakes; cook over medium heat, stirring occasionally, till tender, about 5 mins. Add in marinara sauce and bring to a boil. Meanwhile, in a mixer bowl, beat ricotta, Parmesan, salt and pepper till creamy. Stir in parsley. Toss pasta immediately with marinara sauce and bacon. Pass ricotta.
