  • Passover Chocolate Chip Cookies

    Ingredients

    • 1 1/2 c. Brown sugar, firmly packed
    • 1/2 c. White sugar
    • 2 Tbsp. Passover vanilla sugar
    •     Or possibly 1 ts vanilla
    • 1 c. Unsalted butter or possibly margarine
    • 2 x Large eggs
    • 1/4 tsp Salt
    • 1/4 c. Matzoh meal
    • 1/2 c. Matzoh cake meal
    • 1 c. Potato starch
    • 2 c. Chocolate chips

    Directions

    1. Cream both sugars together with vanilla sugar or possibly vanilla, butter.
    2. Blend in the Large eggs. Stir in the salt, matzoh meal, cake meal potato starch and chocolate chips. Refrigeratethe dough for over an houror over night. (It freezes well)
    3. Preheat oven to 350 F . Line a couple of baking sheets with parchment paper. Scoop tsp. of dough onto the sheets, leaving room for them to spread.
    4. Bake in the preheated oven about 12 min. Let the cookies sit on the parchment paper for 10-15 min, till just cold. Using a metal spatula transfer them to racks to finish cooling. The Washington Post 3/96
