Passover Chocolate Chip Cookies
Ingredients
- 1 1/2 c. Brown sugar, firmly packed
- 1/2 c. White sugar
- 2 Tbsp. Passover vanilla sugar
- Or possibly 1 ts vanilla
- 1 c. Unsalted butter or possibly margarine
- 2 x Large eggs
- 1/4 tsp Salt
- 1/4 c. Matzoh meal
- 1/2 c. Matzoh cake meal
- 1 c. Potato starch
- 2 c. Chocolate chips
Directions
- Cream both sugars together with vanilla sugar or possibly vanilla, butter.
- Blend in the Large eggs. Stir in the salt, matzoh meal, cake meal potato starch and chocolate chips. Refrigeratethe dough for over an houror over night. (It freezes well)
- Preheat oven to 350 F . Line a couple of baking sheets with parchment paper. Scoop tsp. of dough onto the sheets, leaving room for them to spread.
- Bake in the preheated oven about 12 min. Let the cookies sit on the parchment paper for 10-15 min, till just cold. Using a metal spatula transfer them to racks to finish cooling. The Washington Post 3/96
