    Ingredients

    • 1 tablespoon vegetable oil
    • 1 cup long-grain white rice
    • 1/3 cup honey
    • 1 can (8 ounces) pineapple chunks in juice, drained and coarsely chopped (juice reserved)
    • Coarse salt and ground pepper
    • 1 pork tenderloin (1 pound), cut into 1 1/2-inch cubes
    • 2 medium red bell peppers, cut into 1 1/2-inch pieces
    • 2 scallions, thinly sliced
    • 1 teaspoon grated fresh ginger (from a peeled 1/2-inch piece)
    • 1 lime, cut into wedges, for serving

    Directions

    1. In a small bowl, whisk honey, 2 tablespoons of pineapple juice, ginger, and salt and pepper. Set aside.
    2. Cook rice according to package instructions. Set aside.
    3. Place oil in skillet over medium heat. Brown the pork cubes on all sides, about 10 minutes. Add diced bell pepper and pineapple chunks. Cook until peppers are tender and the pineapple is cooked. Remove from pan.
    4. Add the honey liquid mixture to the pan and bring to a simmer. Add pork and pineapples to liquid and coat well.
    5. Serve over rice with scallions and lime wedges.
