  • Glazed Pork Chops With Pineapple, Watermelon And Ginger Relish

    Ingredients

    • 4 x Pork loin chops, 3/4" thick trimmed to leave only 1/4" fat Salt to taste Freshly-grnd black pepper to taste
    • 1/4 tsp Cayenne or possibly paprika
    • 2 Tbsp. Extra virgin olive oil
    • 1 c. Pineapple juice
    • 2 Tbsp. Chopped ginger root
    • 2 Tbsp. Brown sugar
    • 1 tsp Cornstarch
    • 1 Tbsp. Cool water
    • 2 tsp Dijon-style mustard
    • 1 c. Diced fresh or possibly canned pineapple
    • 1 c. Diced seeded watermelon
    • 2 x Scallions thinly sliced
    • 1/2 x Jalapeno seeded, chopped fine
    • 1 Tbsp. Finely-minced fresh parsley
    • 2 Tbsp. Lime juice

    Directions

    1. Season the chops with salt, pepper and cayenne. In a skillet heat the oil over moderately-high heat till almost smoking. Cook the pork chops till well-browned on either side, about 2 to 3 min per side. Remove chops to a plate, cover with foil and keep hot.
    2. Deglaze the skillet with 2/3 c. pineapple juice, stirring to remove browned bits from bottom of pan. Stir in 1 Tbsp. of the chopped ginger root and the brown sugar and bring sauce to a simmer. Return the chops and any juices which have collected to the skillet, reduce heat and simmer, covered, for 6 to 8 min till meat is cooked through. Remove chops to a plate, cover with foil and keep hot.
    3. If necessary simmer sauce till slightly reduced. Mix together the cornstarch and cool water and stir into the simmering sauce, continuing to stir till thickened. Reduce heat, stir in mustard and adjust seasoning with salt and pepper.
    4. In a bowl combine pineapple, watermelon, the remaining Tbsp. of ginger root, scallions, jalapeno, parsley, lime juice and the remaining 1/3 c. pineapple juice, mixing well.
    5. Serve the chops hot, glazed with the sauce and garnished with the pineapple and watermelon relish.
    6. This recipe yields 4 servings.
