    • 2 cups eggnog, I used Dean's Eggnog
    • 2 cups water
    • 1 1/2 cups uncooked steel cut oats
    • 1/4 t salt
    • 1/2 cup dried cherries, coarsely chopped
    • 1/2 t pumpkin pie spice

    Welcome Back Everyone! This month flew by and I can't believe Thanksgiving is in a few days! This month I was assigned The Spiffy Cookie Erin has so many wonderful recipes that it was very difficult to pick one:) I decided on Overnight Slow Cooker Eggnog Cranberry Steel Cut Oatmeal The flavors in this oatmeal screamed Holiday and I thought, what a perfect dish to make and to have for breakfast, before I leave on my long day of Holiday Shopping!! Erin made her own eggnog, yum, but since I always have ready made eggnog in my refrigerator this time of year, I used that. I also used dried cherries, instead of the cranberries and I added an extra 1/2 cup steel cut oats. This oatmeal was excellent!!! My hubby and I loved it:) Thanks Erin for a wonderful recipe.

    For crispy edges- Coat inside of 3 1/2 quart slow cooker with cooking spray. Add all ingredients to slow cooker. Stir; cover and cook on low for 5 hours or until oats are cooked and tender. Edges should be browned. Serve with additional eggnog and a sprinkling of pumpkin pie spice.
