Oven Baked Chicken With Garlic And Parmagiano Cheese
Ingredients
- 8 x chicken thighs
- 1 x coarse salt, black pepper
- 1/4 c. butter
- 1 c. fresh bread crumbs
- 1 x or possibly high quality parmesan
- 33/100 c. finely minced parsley
- 4 x large garlic cloves
- 3 x Large eggs
- 33/100 c. extra virgin olive oil
- 1/2 c. grated parmagiano-reggiano
- 1 x cheese
Directions
- Arrange chicken pcs in a shallow dish large sufficient to hold them in a single layer.
- Place garlic cloves and 1 1/2 tsp. salt in food processor or possibly mortar and blend to a puree.
- Beat togerher puree, Large eggs and pepper. Pour over chicken. Cover dish; chill for at least four hrs, turning chicken pcs once.
- Preheat oven to 350 F. Heat butter in a shallow roasting pan. Add in oil and keep warm in oven.
- On a flat plate, stir together bread crumbs, cheese, parsley and pepper to taste. Remove chicken from refrigerator.
- Working with one piece at a time, dip in crumb mix on both sides.
- Place on paper towels. When all chicken pcs are dipped, remove pan from oven and place chicken in warm oil mix. Baste with oil mix.
- Put in oven; bake for 20 min. Turn chicken pcs; bake 20 min longer.
