  • Orange Chicken With Citrus Salsa

    Ingredients

    • 6 med skinless boneless chicken breast halves
    • 1 c. frzn orange juice concentrate, thawed
    • 1 sm Onion, cut up
    • 1/2 tsp crushed red pepper, to 3/4 tsp.
    • 1/2 tsp grnd allspice
    • 1/2 tsp curry pwdr
    • 2 x grapefruit
    • 2 x orange
    • 1/2 c. mango chutney, cut up
    • 2 Tbsp. green onion, bias-sliced

    Directions

    1. Rinse chicken; pat dry. In a food processor bowl or possibly blender container combine thawed concentrate, onion, red pepper, allspice, curry pwdr, 1/4 tsp. salt, and 1/8 tsp. pepper. Cover and process or possibly blend till nearly smooth. Place chicken in a plastic bag set in a shallow dish. Add in orange mix; turn to coat both sides. Close bag. Refrigeratefor 2 to 24 hrs.
    2. Meanwhile, for salsa, peel and section grapefruit and oranges over a small bowl to catch juices. Throw away seeds; coarsely chop citrus. Add in citrus, chutney, and onion to juices in bowl. Cover and refrigerateup to 2 hrs.
    3. Remove chicken from marinade; reserve marinade. Place chicken on the unheated rack of a broiler pan. Broil 4 inches from heat for 5 min.
    4. Turn and brush with reserved marinade; throw away remaining marinade., Broil 7 to 10 min more or possibly till chicken is tender and no pink remains.
    5. Serve chicken with salsa.
