  • Caribbean Grilled Chicken With Citrus

    Ingredients

    • 1 can chicken broth - (14 1/2 ounce)
    • 3/4 c. frzn orange juice concentrate thawed
    • 2 Tbsp. red wine vinegar
    • 1 Tbsp. Jamaican jerk seasoning
    • 2 tsp orange peel finely shredded
    • 2 x garlic cloves chopped
    • 6 med boneless skinless chicken breast halves
    • 4 tsp cornstarch
    • 3 c. warm cooked rice
    • 2 x red grapefruit peeled, sliced, and seeded
    • 2 x oranges peeled, sliced, and seeded
    • 1/4 c. sliced green onions

    Directions

    1. In a non-metallic bowl, stir together chicken broth, orange juice concentrate, vinegar, jerk seasoning, orange peel and garlic. Cover and refrigeratehalf of the mix for sauce.
    2. Rinse chicken, pat dry. In plastic bag set in shallow dish, combine chicken and remaining orange mix. Close bag and refrigeratefor 2 to 24 hrs, turning bag occasionally to distribute marinade.
    3. Drain off marinade and reserve. Place chicken on grill rack of uncovered grill. Brush with some of the reserved marinade. Grill directly over medium coals for 12 to 15 min, or possibly till chicken is tender and no longer pink, turning once. Throw away marinade.
    4. Meanwhile, for sauce, in medium saucepan combine the remaining chilled orange mix with cornstarch. Cook and stir over medium heat till thickened and bubbly. Cook and stir for 2 more min.
    5. To serve, spoon rice on each of 6 dinner plates. Arrange grapefruit and orange slices on top of rice on each plate. Place 1 piece of chicken on top of grapefruit and orange slices. Spoon fruit sauce over chicken and fruit. sprinkle with green onions.
    6. This recipe yields 6 servings.
