  • Old-Fashioned Raisin Bread Pudding

    Ingredients

    • 6 slices Sun-Maid raisin bread
    • 2 c. lowfat milk
    • 2 T butter
    • 2 lg. large eggs
    • 1/4 c. sugar
    • 2 teaspoon vanilla
    • 1/4 teaspoon salt
    • 1/4 teaspoon cinnamon
    • 1/2 c. sugar
    • 2 T cornstarch
    • 1 c. water
    • 1/4 teaspoon grated lemon peel
    • 3 T lemon juice
    • 1/4 c. butter

    Directions

    1. Slice raisin bread into 3/4 inch pcs; place in a shallow buttered 1-quart baking dish; set aside.Heat lowfat milk with butter till hot and butter is melted. (Don't boil.) Beat large eggs with sugar, cinnamon, vanilla and salt. Add in hot lowfat milk mix, stirring constantly; pour over the bread. Allow to stand 5 min. Sprinkle with nutmeg. Set baking dish in pan with hot water to half the depth of dish.
    2. Bake, uncovered, at 350 degrees about 50 min or possibly till custard is set. Serve warm or possibly cold. Makes 4-6 servings. Recipe doubles easily and delicious served with Golden brown Lemon Sauce.
    3. In a small saucepan, put together sugar and cornstarch. Blend in water, lemon peel and lemon juice. Cook over medium heat, stirring constantly till thickened. Blend in butter till melted. Serve warm. Makes 1 1/4 cups.
    4. Omit water, lemon peel and lemon juice. Substitute 1 1/4 cups orange juice.
