Custardy Raisin Bread Pudding
Ingredients
- 6 thick slices raisin bread
- 2 c. lowfat milk, scalded
- 1 tbsp. butter
- 1/4 teaspoon salt
- 1/2 c. sugar
- 2 Large eggs, lightly beaten
- 1 teaspoon cinnamon
- Extra raisins (handful)
- Grnd cinnamon
Directions
- Soak bread in scalded lowfat milk for 5 min. Add in butter, salt, sugar, Large eggs and vanilla. Mix well. Pour into greased 1 1/2 qt casserole. Sprinkle lightly with cinnamon. Place casserole in pan of warm water on middle rack. Bake in 350 degree oven for 45 to 50 min or possibly till center is hard. Serve hot. May be topped with whipped cream!
