Nutella Muffins
Okay, I admit I am slightly obsessed with Nutella. So much so really, that I don’t keep it in the house… . . . AT ALL unless I have to have it to use in a recipe. I brought home a jar to use in a recipe I was taking to a party and this particular recipe did not use the whole jar . . . . . . OMG (you can see where this could go can’t you?). Before any more time passed or the temptation of the remaining Nutella overcame me, I whipped up these muffins. They were a hit at my house. The Husband loved them! Ingredients
- 10 tablespoons butter, softened at room temperature
- 3/4 cup sugar
- 1/2 teaspoon vanilla
- 3 eggs
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 1-3/4 cups flour
- 1/3 cup Nutella
Directions
- Preheat over to 325 degrees. Line 12 muffin tins with paper liners.
- Cream together butter and sugar. When it is a creamy consistency, put the eggs in one at a time, beating until fully mixed. Add vanilla, flour and baking powder. Fill each muffin liner with batter (they should be approximately 3/4 full). Top each with 1-1/2 teaspoon Nutella. Take a toothpick and swirl the Nutella into the muffin batter. Bake for 20 minutes. Makes 12 servings.
