    Nutella Chocolate Chip Zucchini Muffins

    Nutella Chocolate Chip Zucchini Muffins are perfect for afternoon breaks, after school shack or even breakfast. Moist and light with a great chocolate flavour.

    Ingredients

    • 2 cups all-purpose flour
    • 2 cups grated zucchini (squeeze to remove excess moisture)
    • 2 eggs
    • 1/2 cup milk
    • 1/2 cup sour cream
    • 2 tsp. vanilla
    • 1 cup sugar
    • 2 1/2 tsp. baking powder
    • 1 1/2 tsp. baking soda
    • 1 cup chocolate chips
    • 2/3 cup nutella
    • 3/4 cup butter (room temperature)

    Directions

    1. Preheat oven to 375º F
    2. Prepare muffin tins with liners
    3. Grate zucchini and squeeze out excess moisture (set aside)
    4. Combine flour, baking powder & baking soda in a bowl (set aside)
    5. In another bowl, cream butter, sugar and vanilla
    6. Add sour cream (combine)
    7. Add Nutella (combine)
    8. Add zucchini
    9. Alternately to this mixture add flour mixture, and milk
    10. Add chocolate chips, mixing just to combine (do not over mix)
    11. Bake for approximately 20-23 minutes
    12. Let cool in pan for a few minutes
    13. Remove to cooling rack
    14. ENJOY!!
