North African Pumpkin Salad With Garlic, Chilli Paste And C
Ingredients
- 2 lb Pumpkin, roasted, peeled and mashed
- 1 Tbsp. Balsamic vinegar
- 1 Tbsp. Red wine vinegar
- 5 Tbsp. Extra virgin extra virgin olive oil
- 2 x Cloves garlic, mashed with a little salt
- 2 tsp Grnd caraway seeds - lightly toasted
- 2 Tbsp. Minced coriander
- 2 x Hard boiled Large eggs, peeled
- 3 tsp Harissa
Directions
- Peel the pumpkin and de-seed it. Drizzle with extra virgin olive oil and roast at 200 C for about 1 hour. Allow to cold slightly and then peel and mash it.
- Add in the venigar, Harissa, caraway seeds, balsamic vinegar and salt. Mix together.
- Garnish with the coriander and quartered Large eggs.
