Romaine And Cucumber Salad With Garlic Vinaigrette
Ingredients
- 2 Tbsp. White-wine vinegar
- 2 x Garlic cloves, chopped and mashed to a paste with 1/2 tsp. salt
- 1/3 c. Extra virgin olive oil
- 2 x Heads romaine, torn into bite-size pcs, rinsed, and spun dry (about 14 c.)
- 2 x Cucumbers, peeled, halved lengthwise, seeded, and sliced crosswise
Directions
- In a large bowl whisk together the vinegar, the garlic paste, and pepper to taste, add in the oil in a stream, whisking, and whisk the vinaigrette till it is emulsified. Add in the romaine and the cucumbers and toss the salad well.
- Serves 8.
