  • "More Rockin' Chicken Stew"

    Ingredients

    • Moroccan Stewed Chicken
    • 1 lb boneless chicken
    • 1 large zucchini, cute into cubes
    • 1 can garbanzo beans
    • 1 can diced tomatoes
    • 1tsp olive oil
    • 1 cup chicken stock
    • 1/2 tsp cayenne pepper
    • 1 tsp ground cumin
    • 1/2 tsp ground cinnamon

    It’s that time again. The time in between winter and spring. The time to make plans, start diets, work indoors, plot gardens, and…Make soup.

    It’s officially the Witching Hour, Witchez. Time to get your soup groove on.

    This is my least favorite time of the year, although I am trying to change that mindset. ‘Course, I’m fairly certain I say that every January and February. I always feel as though I am just "waiting" in January and February. Waiting for spring? Waiting for the thaw is more like it these days! Living comfortably (comfortably being the operative word here) in a 142 year old house with no central heat will at the very least keep things interesting…and with all the pieces of family that complete our picture these days it’s a VERY good thing I have a large recipe repertoire.

    I have a recipe and I’m not afraid to use it!

    With all the excitement of the fall- National Pit Bull Awareness Day, Full Bowls/Solace fundraisers and events, and moving- I feel as if I really didn’t cook too much before we packed up the Gypsy caravan. For those of you who may be experiencing anxiety over this, you can stop the nail biting. I’m surely making up for that lapse NOW. There’s something about this space that makes me want to create, and share it with my friends and family. This is the PERFECT place.

    Heat oil in a large sautee pan and cook ckicken 2-3 minutes until it's browned. Add the zucchini and continue cooking until the zucchini is slightly browned. Add remaining ingredients and simmer 15-20 minutes.

    Pita Chips

    Pitas, cut in halves. Spray with olive oil or cooking spray. Cute each half in 2 pieces, season with salt, pepper, garlic, or other spices of your choice. Cook on 400 for about 7 minutes, or until crispy. Serve with Hummus.
