  • Moon Cake

    Ingredients

    • 1 c. Water
    • 1/2 c. Butter or possibly margarine
    • 1 c. All purpose flour
    • 4 x Large eggs
    • 2 pkt (3.4 ounce. ea.) instant vanilla pudding mix
    • 3 c. Cool lowfat milk
    • 1 pkt Cream cheese, softened
    • 1 ctn (8 ounce.) whipped topping, thawed
    •     Chocolate sauce
    •     Minced nuts

    Directions

    1. In a saucepan, bring water and butter to a boil. Add in flour all at once and stir till mix forms a ball. Remove from heat and cold slightly. Add in Large eggs, one at a time, beating well after each addition. Spread on a greased 15x10x1 inch jelly roll pan. Bake at 400 for 30 min. cold but don't prick, leaving surface with moon-like appearance. Meanwhile, for filling, beat pudding, and lowfat milk till thick. Add in cream cheese; blend well. Spread on crust; chill 20 min. Top with whipped topping. Drizzle chocolate sauce over top and sprinkle with nuts.
    2. Yield about 15 servings.
    3. Variation: Substitute a different flavor of pudding and garnish with chocolate curls instead of chocolate sauce.
