    Ingredients

    • Jeera - 1/4 tsp
    • Potato- 4,peeled and cubed
    • Carrot-2,cubed
    • Capsicum-1 ,chopped
    • Brinjal-1/2 ,(i used the big brinjal),chopped
    • Turmeric Pwd-1/4 tsp
    • ChilliPowder- 1tsp
    • Corinader Pwd-1/2 tsp
    • Hing- 1/4 tsp
    • Salt as needed
    • Oil- 2 tbsp

    Mixed Vegetable Curry

    I wanted to prepare a simple vegetable curry for roti,i decided to make with the combination of potato ,brinjal and carrot,then i wanted a crunchy bit so added capsicum in the last as i didnt want to cook soft.I have added the brinjal(big one) in the last ,it does not need so much cooking.It was delicious simple side dish which was quite colorful.

    Ingredients

    Coriander leaves for garnish.

    Method

    Heat oil in kadai, add the jeera when it splutters add the cubed potato and saute it well for 2 min.

    Then add the carrot and hing,turmeric chilli ,salt and coriander pwd.Mix it all together.

    Cook in medium flame with lid closed,till the potato is cooked ,once in a while ,stir it well that it does not stick to the pan.

    When the potato is cooked ,in a separate pan add 1 tsp of oil ,saute the brinjal and capsicum,add salt and little chilli pwd.

    Add this to the cooked potato and mix well.Cook again for 5min in medium flame.

    Garnish with coriander leaves and remove from heat.

    You can add lemon wedge when u serve if u want to be bit tangy.

    Serve them with chappati or Rice.
