  • Mini Pizza Muffins for SRC

    Ingredients

    • 1/8 cup butter, melted
    • 1 large egg
    • 1 tablespoon Pizza Sauce
    • 1/2 cup plain yoghurt ( I used my Greek Yoghurt)
    • 1 cup flour
    • 1 1/2 teaspoons Baking Powder
    • 1/2 teaspoon Baking Soda
    • 1/2 teaspoon salt (I omitted this, as I was using salted butter)
    • 1/8 cup white sugar
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon dried oregano
    • 1/2 cup finely cubed sharp cheddar cheese
    • 1/4 cup minced red pepper (I omitted this as one of the people there is allergic to peppers)
    • 5 oz. mozzarella cheese, cubed

    I get excited, I know, but gee, if it weren't for the SRC, I would never have the excuse for finding the perfect 'recipe' to make for my entry every month. I mean, I 'have to' take the time to read another food blog to find a great recipe to make, and this time I found a winner, recipe that is. My assigned blog was Jenny's Cookbook this month, and I had fun reading all the recipes, well a lot of them.

    I found the right recipe right off the bat, well, kinda, I also found two other recipes that are must make soon recipes. You see, one of my treats from time to time is to visit an Indian restaurant in the 'big' city and have their Tandoori Chicken and now I have a recipe to try, courtesy of Jenny and I love, love, love eggplant, but usually just make it into my version of Eggplant Parmesan, which I call an Eggplant Bake. Jenny's Tandoori Chicken looks like it is a winner and one I will be trying soon. And then there is her Mirza Ghasemi, which is something I am going to try. Well, as soon as I get to the 'big' city and buy eggplant again.

    Now for my SRC recipe reveal:

    Wicked Good Pizza Muffins

    I actually made these and brought them to my weekly Friday night gathering and shared them with some lovely ladies a couple of weeks ago. I also made enough for the guys as well, but for them I added some pepperoni on top.

    Then I had to wait and share the recipe and the how-to's here. sigh.

    But I did, wait that is.

    Recipe:

    Pizza sauce for topping

    Preheat oven to 400 degrees. Spray the cups on mini muffin tins, well. Jenny says this will make about 6 regular muffins, but you will need to cook them a little longer, I got 42 mini muffins by doubling the recipe.

    Mix together the butter, egg, pizza sauce and yoghurt until well mixed. I also added the dried spices to the wet mixture, it helps the flavours 'bloom' a little more.

    In a separate bowl, mix the rest of the dry ingredients together. Then add the wet ingredients to the dry and mix just until combined. Add the cheese and minced pepper. This will be a thick batter.

    I used my new cookie scoop to portion the batter into the cups. Worked like a charm. Place a 1/2 teaspoon of pizza sauce on top of the muffin batter and then put a piece of mozzarella cheese on top. I have a demi tasse spoon that was the perfect size to plop the sauce on with. I pressed the cheese into the top of the muffin, and them decorated them with some chopped up pepperoni and some diced green pepper on some.

    A couple of these looked like the x-wing fighters from Star Wars.

    Bake for about 15 minutes, until bubbly. Serve immediately, although they were pretty good after sitting for a little bit.

    I will make these again, but the next time, I will add a few more toppings I think, as well as adding more pizza sauce to the batter.
