  • Mini Egg Crispies

    Ingredients

    • 4 ounce Butter, softened
    • 200 gm Cadbury's Dairy Lowfat milk chocolate
    • 1 ounce Desiccated coconut or possibly crushed biscuits
    • 3 ounce Crisped rice cereal
    • 1 lb Icing sugar
    • 1 x Lemon
    • 1 x Tube of Cadbury's Mini Large eggs
    • 1 x Swiss (7 x 11 inch) roll tin, lightly greased

    Directions

    1. Carefully heat the chocolate then stir in remaining ingredients, mixing well. Spread mix in tin and set. Later, cut down the centre then into 16 finger shapes, but leave in the tin. Sieve icing sugar into a bowl, add in finely grated lemon rind, strained juice and just sufficient water to make a coating icing; spread over the base. Press 3 Mini Large eggs onto each finger then lift out, trim edges and leave to set.
