Chocolate Chip Mini Muffins
Ingredients
- 1 c. + 2 Tb. All purpose flour
- 1/3 c. Granulated sugar
- 1 1/2 tsp Baking pwdr
- 1/4 tsp Salt
- 1/2 c. Skim lowfat milk
- 1/4 c. Canola oil
- 1/4 c. Egg substitute
- 1 1/2 ounce Mini semisweet chocolate morsels
- 1 Tbsp. Grated orange peel
Directions
- 1. Preheat oven to 400F. Line 24 mini muffin c. with paper lines.
- 2. In large bowl, combine flour, sugar, baking pwdr and salt. Add in lowfat milk, oil and egg substitute; stir just till combined. Stir in chocolate and orange peel; mix just till combined.
- 3. Spoon batter proportionately into prepared c., filling each about two-thirds full. Bake 12-15 min, till golden brown and toothpick inserted in center comes out clean. Remove from pan; cold completely on rack.
