  • Chocolate Chip Mini Muffins

    Ingredients

    • 1 c. + 2 Tb. All purpose flour
    • 1/3 c. Granulated sugar
    • 1 1/2 tsp Baking pwdr
    • 1/4 tsp Salt
    • 1/2 c. Skim lowfat milk
    • 1/4 c. Canola oil
    • 1/4 c. Egg substitute
    • 1 1/2 ounce Mini semisweet chocolate morsels
    • 1 Tbsp. Grated orange peel

    Directions

    1. 1. Preheat oven to 400F. Line 24 mini muffin c. with paper lines.
    2. 2. In large bowl, combine flour, sugar, baking pwdr and salt. Add in lowfat milk, oil and egg substitute; stir just till combined. Stir in chocolate and orange peel; mix just till combined.
    3. 3. Spoon batter proportionately into prepared c., filling each about two-thirds full. Bake 12-15 min, till golden brown and toothpick inserted in center comes out clean. Remove from pan; cold completely on rack.
    4. 50 C.
