Mexican Inspired Breakfast Tostadas

- 4 Flour Tortillas (6") (can use Corn Tortillas If preferred)
- 6 Large Eggs
- 2 tablespoons light cream
- a few pinches salt
- 2 tablespoon sweet cream butter
- one Roma Tomato
- 3 tablespoons canned green chile's
- Optional garnish of cheese (your choice)
Directions
- In a skillet on the stove top add butter, in a mixing bowl add eggs, cream, salt and whisk well together, once butter melts on medium heat add eggs cook lightly to scrambled-eggs set aside
- Warm Flour tortillas in the oven just to make them lightly toasted but still pliable
- Dice Roma tomato
- Dice Green chile's
- To assemble: lay tortilla on a plate add a helping of scrambled eggs, add diced tomatoes, diced Green Chile's (optional cheese if desired)
