Mexican Inspired Breakfast Tostadas

Eggs, Green Chile's,Tomato served open faced on a flour Tortilla!

Ingredients

  • 4 Flour Tortillas (6") (can use Corn Tortillas If preferred)
  • 6 Large Eggs
  • 2 tablespoons light cream
  • a few pinches salt
  • 2 tablespoon sweet cream butter
  • one Roma Tomato
  • 3 tablespoons canned green chile's
  • Optional garnish of cheese (your choice)

Directions

  1. In a skillet on the stove top add butter, in a mixing bowl add eggs, cream, salt and whisk well together, once butter melts on medium heat add eggs cook lightly to scrambled-eggs set aside
  2. Warm Flour tortillas in the oven just to make them lightly toasted but still pliable
  3. Dice Roma tomato
  4. Dice Green chile's
  5. To assemble: lay tortilla on a plate add a helping of scrambled eggs, add diced tomatoes, diced Green Chile's (optional cheese if desired)
