    Wonderful weekend supper or when company comes to visit. The oven does all the work! Lovely presentation with great flavors.

    Ingredients

    • 3 Red Bell Peppers
    • 3 Green Bell Peppers
    • 2 cups cooked Rice (your choice)
    • One diced Large Tomato
    • 1 cup cooked cubed (small) white Meat Chicken
    • one lemon zest and juice
    • 2 tablespoons Pure Olive Oil
    • 1 cup Feta Cheese Crumbles
    • 1 teaspoon Oregano
    • one teaspoon Dill
    • one teaspoon Fresh Mint (chopped finely)
    • 2 shallots finely diced
    • 2 cloves of garlic minced (or chopped finely)
    • 1-1/2 Cup Vegetable or Chicken broth/stock
    • 2 tablespoons Tomato Paste (I use from a tube)

    Directions

    1. Slice the tops from each pepper (reserve), clean out seeds and membranes from each pepper, rinse well, dry
    2. In a large mixing bowl add cooked rice, chicken cubes, lemon zest and juice, stir as you add each ingredient, add minced garlic, oregano, dill, stir gently, add diced finely shallots, diced tomato, mint,
    3. Once all seasonings/rice/chicken are incorporated fill each pepper cavity full, add feta cheese crumbles to the top of each, add top of the pepper, and place in a non stick baking dish, add vegetable or chicken stock, tomato paste, drizzle with olive oil and whisk together.
    4. Lightly cover with a tent foil and place in a 375 F oven and bake 25 minutes.
    5. Serve and enjoy the flavors!
