Meatballs In Chipotle Sauce
Chipotle chilies (smoked, dried jalapeño's), bacon and beef broth give this unusual tomato-based sauce its deep flavor. Use it in Braised Meat Loaf and of course, Meatballs in Chipotle Sauce. Ingredients
- 4 Cups Chipotle Sauce (See Attached)
- 1 Lb. Ground Beef
- 1 Lb. Ground Pork
- 2 Large Eggs, Slightly beaten
- 1/2 Cup Dry Bread Crumbs
- 1/2 Cup Milk
- 2 Tbsp. Onion, Minced
- 2 Tbsp. Fresh Cilantro, Chopped
- 3/4 Tsp. Salt
- 1/2 Tsp. Ground Black Pepper
Directions
- Prepare Chipotle Sauce; reserve.
- Mix remaining ingredients; shape into 1 1/2-Inch balls. Heat sauce and meatballs boiling; reduce heat. Cover and simmer until meatballs are done, about 20 minutes.
- Serve with hot cooked rice or noodles, if desired.
