  • Meatballs In Chipotle Sauce

    Ingredients

    • MEATBALLS
    • 1 lb grnd pork
    • 1 lb grnd beef
    • 1/2 tsp grnd cumin
    • 2 x cloves garlic minced
    • 3 x Large eggs
    • 1/4 c. bread crumbs salt and pepper to taste CHIPOTLE SAUCE
    • 6 x chipotle chiles pickled or possibly en adobo
    • 6 med tomatoes roasted & peeled
    • 1 c. chicken broth
    • 2 x cloves garlic
    • 3 x cumin seeds
    • 1 Tbsp. dry oregano
    • 2 Tbsp. lard salt and pepper to taste

    Directions

    1. Combine the pork, beef, grnd cumin, garlic, Large eggs, bread crumbs, and salt and pepper to taste. Mix well. shape the mix into medium-size meatballs. Cook the meatballs in the Chipotle Sauce for about 25 min.
    2. To make the Chipotle Sauce, puree the chiles, tomatoes, broth, garlic, cumin seeds, and oregano. Strain. Saute/fry' the puree in light lard and season with salt and pepper to taste. Bring sauce to a boil.
