    Meal planning is a matter of deciding what food you want to cook, who will eat the food and what food is available to cook. We are currently in the process of planning the menu or meals for our yearly vacation to Charleston. A huge part of the total vacation enjoyment is sitting around the table with family and friends and having robust conversations. As is the usual case with us we will have some carnivores, some fish eaters and lots of dessert eaters. We plan to serve both a meat entree and a fish entree each night; along with appetizers and desserts.

    It is important to take into consideration how much time it will take to prepare the meal, especially while on vacation. Meals should be quick to prepare so as not to take too much time off the vacation clock. We have the added advantage this year of looking at last year’s menu and determining what worked and what didn’t.

    Planning a special meal fits into the same decision making process. What can we cook, serve and clean up with as little impact on our time as possible. All this while putting great meals on the table; no fast food allowed.

    Now for the recipe. This recipe can be used as an appetizer or a dinner entree. It fits the categories above in that it is easy to make, takes little time and more importantly everyone loves.

    Place flour, dill, lemon zest and garlic in processor, process until blended. Put flour mixture in plastic bag, add shrimp and shake to coat. Heat oil in a pan or wok; sauté shrimp 1 minute per side. Remove and drain on paper towel. Place shrimp in an ovenproof dish; sprinkle Panko breadcrumbs on top.

    Place under broiler for 2 minutes or until brown. Drizzle with lemon juice and then remaining olive oil.
