    This was an interesting idea that is all over Pinterest for making cauliflower hummus. You simply use a recipe for homemade hummus but substitute steamed cauliflower.  With less calories, less fat, and less carbohydrates than regular hummus, my mashed cauliflower hummus is an interesting and healthy substitute. I love making recipes using the incredibly healthy and versatile cauliflower. In fact, I have a Pinterest board just for making mock cauliflower recipes. No matter what, my favorite is always the cauliflower and I've listed other mock cauliflower recipe links below.  For this hummus, I used my recipe for my homemade chickpea hummus, but substituted cauliflower instead of chick peas, and reduced the tahini and the oil! Steamed Cauliflower Conventional humus is seasoned with lots of lemon juice, cumin, fresh garlic, salt and pepper. and usually the final product is sprinkled with paprika. In addition, humus always contains some tahini and olive oil to bind it.  This recipe is no different. It has all the rich spices, herbs, and seasonings that makes hummus so tasty.  Ingredients:  1 small head of cauliflower, broken into florets and steamed 2 tablespoons of Tahini paste Juice of one whole lemon or lime 1/4 teaspoon of garlic powder Salt and pepper to taste 1/4 teaspoon of cumin Paprika or Za'atar for garnish Directions:  Add all of the ingredients to the food processor using the metal blade. Pulse on and off quickly until you get a creamy consistency. Place in bowl and serve as a dip with gluten free chips or crudite.  Shared on Weekend Cooking at The Intrepid Reader and Baker
