Maple Apple Chicken

- 1/2 c Chicken Broth
- 1/3 c Maple Syrup
- 1/4 c Apple Cider Vinegar
- 1 1/2 tsp Salt, divided
- 1 1/2 tsp Pepper, divided
- 3 or 4 boneless, skinless Chicken Breasts
- 1 Tb Butter
- 1 Tb Olive Oil
- 1 "red" apple
- 1 Granny Smith Apple
- 1 Onion
- 1 tsp Thyme
- 1/2 tsp rubbed Sage
Directions
- To begin, combine the Chicken Broth, Maple Syrup, Apple Cider Vinegar and half teaspoon each of salt & pepper in a bowl. Set it aside for now.
- Cut the Chicken Breasts into 2 inch pieces. Salt & pepper them well.
- In a large skillet, heat a tablespoon each of Butter and olive oil over medium high heat.
- Cook the chicken in the skillet until golden on both sides.
- While it is cooking, core & wedge the apples. And chop up the Onion.
- When the chicken is golden, remove it to a bowl and cover it tightly with foil.
- Toss your apples and onion into the skillet and cook over medium heat until they are a little golden, too.
- Add in the Thyme and Sage. Stir those all together
- Add your chicken and liquid mixture to the skillet. Stir them together, and then cook for 3-5 more minutes, or until the chicken is cooked through.
