Maple Apple Chicken

This flavorful dish is quick to make, and great for a weeknight dinner.

Ingredients

  • 1/2 c Chicken Broth
  • 1/3 c Maple Syrup
  • 1/4 c Apple Cider Vinegar
  • 1 1/2 tsp Salt, divided
  • 1 1/2 tsp Pepper, divided
  • 3 or 4 boneless, skinless Chicken Breasts
  • 1 Tb Butter
  • 1 Tb Olive Oil
  • 1 "red" apple
  • 1 Granny Smith Apple
  • 1 Onion
  • 1 tsp Thyme
  • 1/2 tsp rubbed Sage

Directions

  1. To begin, combine the Chicken Broth, Maple Syrup, Apple Cider Vinegar and half teaspoon each of salt & pepper in a bowl. Set it aside for now.
  2. Cut the Chicken Breasts into 2 inch pieces. Salt & pepper them well.
  3. In a large skillet, heat a tablespoon each of Butter and olive oil over medium high heat.
  4. Cook the chicken in the skillet until golden on both sides.
  5. While it is cooking, core & wedge the apples. And chop up the Onion.
  6. When the chicken is golden, remove it to a bowl and cover it tightly with foil.
  7. Toss your apples and onion into the skillet and cook over medium heat until they are a little golden, too.
  8. Add in the Thyme and Sage. Stir those all together
  9. Add your chicken and liquid mixture to the skillet. Stir them together, and then cook for 3-5 more minutes, or until the chicken is cooked through.
