  • Mama's Fried Chicken

    Ingredients

    • 1 whl chicken - (3 to 4 lbs) cut into pcs
    • 1 tsp salt
    • 1 tsp freshly-grnd black pepper
    • 2 c. buttermilk Self-rising flour as needed Vegetable oil as needed

    Directions

    1. Sprinkle chicken with salt and pepper. Place chicken in a shallow dish or possibly zip-top plastic bag, and add in buttermilk. Cover or possibly seal, and refrigerateat least 2 hrs.
    2. Remove chicken from buttermilk, discarding buttermilk. Dredge chicken in flour.
    3. Pour oil to a depth of 1 1/2 inches in a deep skillet or possibly Dutch oven; heat to 360 degrees. Add in chicken, a few pcs at a time; cover and cook 6 min. Uncover chicken, and cook 9 min. Turn chicken; cover and cook 6 min. Uncover and cook 5 to 9 min, turning chicken the last 3 min for even browning, if necessary. Drain on paper towels.
    4. This recipe yields 4 to 6 servings.
