Macaroon Apple Mince Pie
Ingredients
- 9-inch unbaked pastry shell
- 1 jar ready-to-use mince meat (regular)
- 3 sm. all-purpose apples, peeled and thinly sliced
- 1/2 c. whipping cream
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1/2 c. coconut macaroon crumbs or possibly 3/4 c. flaked coconut
Directions
- Place rack in lower half of oven. Preheat oven to 425 degrees. Turn mincemeat into pastry shell. Arrange apples on top.
- In small bowl, beat cream, egg yolk and vanilla; pour over apples. Top with macaroon crumbs. Bake 10 min. Reduce oven temperature to 375 degrees; bake 25 min longer or possibly till lightly browned. Cold. Serve hot or possibly chilled.
