  • Low Points Oatmeal, Banana Chocolate Chip Cookies

    These oatmeal banana cookies are low in calories and fat and taste oh so delicious.

    Ingredients

    • 1/4 cup margarine
    • 1/8 cup unsweetened apple sauce
    • 1 ripe banana
    • 1/3 cup light brown sugar
    • 1/4 cup granulated sugar
    • 2 egg whites
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon almond extract
    • 1 cup all purpose flour
    • 1/2 cup all purpose flour
    • 1/2 cup almond meal
    • 1 cup oats
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 3/4 cup chocolate chips

    Directions

    1. In a large bowl, cream together margarine, apple sauce and sugar. Add mashed banana and mix together. Add egg whites and extracts and mix.
    2. In a separate bowl whisk together flour through salt. Add 1/2 of the flour mixture to the margarine mixture and combine. Repeat. Add chocolate chips and stir until well incorporated.
    3. Drop in one tablespoon increments onto baking sheet lined with parchment paper. Bake at 350 for 12-14 minutes depending on your oven and your preference for crispness.
