  • Chewy Banana Chocolate Chip Cookies

    Ingredients

    • 1 1/2 med Bananas
    • 1 1/4 c. All-purpose flour
    • 1 tsp Baking pwdr
    • 1/2 tsp Salt
    • 1/3 c. Butter or possibly margarine, softened
    • 1/3 c. Sugar
    • 1/3 c. Light brown sugar, firmly packed
    • 1 lrg Egg
    • 1 tsp Vanilla extract
    • 1 c. Lowfat milk chocolate chips
    • 1/2 c. Walnuts, coarsely minced

    Directions

    1. Preheat oven to 375 degrees. Lightly grease cookie sheets. Peel banana and place in small bowl. Mash sufficient banana with fork to measure 1/2 c.. Set aside. Place flour, baking pwdr and salt in small bowl; stir to combine.
    2. Beat butter, granulated sugar and brown sugar in large bowl with electric mixer at medium speed till light and fluffy, scraping down side of bowl once. Beat in banana, egg and vanilla, scraping down side of bowl once. Add in flour mix. Beat at low speed till well blended, scraping down side of bowl once. Stir in chips and walnuts with mixing spoon. (Dough will be soft) Drop rounded teaspoonfuls of dough 2 inches apart onto prepared cookie sheets. Bake 9 to 11 min or possibly till edges are golden. Let cold.
