Low fat honey Dijon mustard chicken
Quick and easy and awesome!! Goes good with peas and a baked potato For some reason the nutrition label on here calculates wrong, it's 4.5 grams of fat in a 2oz serving of chicken! Ingredients
- 1 package of Perdue chicken breast tenderloins
- 1/4 cup diced onions
- 1tablespoon oil
- Paprika
- Salt
- Pepper
- 2x -1/4 Dijon mustard
- 2x- 1/8 honey
- 2x - 1/4 tsp curry
- 2x-1 tablespoon lemon juice
Directions
- In a frying pan, put 1 tablespoon of oil in pan with 1/4 cup diced onions. Get the onions to look translucent.
- While doing that, sprinkle paprika, salt and pepper to your liking on chicken.
- Once the onions are translucent, place chicken in pan and cook till slightly brown.
- While chicken is cooking, in a bowl mix the honey, mustard, lemon juice and curry.
- Once chicken is slightly brown, pour mixture onto chicken in the pan. Flip the chicken every few minutes. The sauce will darken slightly and slightly thicken.
- It's ready to serve!
