  • Lo Cal Cream Of Broccoli Soup

    Ingredients

    • 1 med. brunch broccoli
    • 4 c. water
    • 1 c. onion, minced
    • 2 c. nonfat lowfat milk
    • 3 tbsp. low calorie butter
    • 6 ounce. grated cheese
    • 3 tbsp. flour
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 3 chicken bouillon cubes
    • 1 teaspoon garlic salt

    Directions

    1. Peel thick stalks of broccoli, chop heads and stalks to make 4 c.. In 3 qt saucepan over high heat, bring water to boil. Add in broccoli and onion. Cook, uncovered, just till broccoli is tender, about 3 min. Drain reserving 2 c. liquid. In blender place broccoli mix and 1 c. lowfat milk, cover and blend till smooth; set aside In same saucepan over medium heat heat butter, stir in flour, salt and pepper till smooth. Stir in reserved cooking liquid, lowfat milk and bouillon cubes. Cook stirring constantly till mix comes to a boil. Stir in pureed broccoli mix. Heat thoroughly. Add in cheese, stir till melted. If you like garnish each serving with broccoli flowers and dices red pepper.
