  • Linda With German Potato Salad

    Ingredients

    • 5 lb Red potatoes -- cooked with Skins on
    • 5 stalk celery -- minced
    • 1 lrg Onion -- minced
    • 3/4 lb Bacon -- cut in pcs
    • 3/4 c. White vinegar
    • 2 c. Water
    • 1 c. Sugar
    • 1/3 c. Fat from bacon
    • 2 Tbsp. All-purpose flour
    • 1/2 tsp Salt
    • 1/4 tsp Pepper
    • 2 tsp Salt -- added to warm Potatoe

    Directions

    1. 1. While potatoes are cooking, chop celery and set aside.
    2. 2. Chopp onions and set aside
    3. 3. Fry bacon , chop in to small pcs and setr aside
    4. 4. Remove bacon from fat, add in onions to fat and saute/fry'
    5. 5. Remove onion from fat and remove fat from pan.
    6. 6. Re-add in 1/3 c fat to pan.
    7. 7. Add in flour and brown slightly
    8. 8. Add in vinegar, water , salt ,sugar and pepper
    9. 9. Cook till clear.
    10. Peel potatoes and cut into slices while still warm. Add in the 2 tsp salt to warm peeled potatoes. Add in onion, celery,bacon and sauce to potatoes.
    11. Let stand for several hrs to let flavors blend.
    12. Decorate with bacon or possibly parsley or possibly whatever.
