German Potato Salad

- 1 C Chopped onions
- 4 Large potatoes boiled , cooled and diced
- 6 Slices Cooked bacon crumbled
- 1/4 C Bacon grease
- 2 T White vinegar
- 1 Tbl Butter
- 1/2 C Hellmans mayonnaise
- 4 Tbl Sugar
- 1 tsp Salt
- 1 tsp Black pepper
- 2 Tbl Chopped fresh Italian parsley
Directions
- In a large pot boil potatoes cool, peel and cube
- In a skillet cook bacon and reserve 1/4 cup of the bacon grease
- In a large skillet sauté chopped onions in the 1 Tbl of butter and reserved bacon grease
- In a mixing bowl stir together the mayonnaise, vinegar , salt, pepper and sugar
- Add to the sautéed onions
- Add the cubed potatoes stir gently and heat through over a low to med heat for about 5 minutes do not boil
- Add the parsley and bacon cook for 1 minute longer
